Ingredients:

  • 5 chicken thighs
  • Salt, to taste
  • Pepper, to taste
  • 5 potatoes
  • 2 carrots
  • 3 cloves of garlic
  • 1 large yellow onion
  • A small bunch of parsley
  • 3½ tbsp of butter
  • ¼ cup of honey
  • 5½ tbsp of sweet chili sauce
  • 5½ tbsp of soy sauce
  • 1 tbsp of mustard

Directions:

Step 1

In a large mixing bowl, place the chicken thighs, then season them with salt and pepper, and toss nicely until covered. Cut the large potatoes into small chunks, then chop the carrots as well, and set them aside. Place a frying pan on a stove over medium-high heat, melt the butter, then place the chicken thighs, and let them cook on each side for about 5 minutes until nicely seared. Remove the chicken thighs, then set them aside, and in the same pan, add the chopped potatoes, carrots, onions, garlic, and parsley.

Step 2

Give them a good stir and saute them for about 10 minutes and set aside once done cooking, then in a separate pan over medium-high heat, add the honey, sweet chili sauce, soy sauce, and mustard, and mix them together until well combined. Place the cooked potatoes and carrots on a baking dish, then top them with the seared chicken thighs, and pour the sauce all over them. Place them inside the preheated oven, then let them bake at 180 degrees for about 40 minutes, and serve with your favorite side dish. Enjoy!
