Season the chicken breasts with some salt and pepper. Next, in a preheated pan, add some cooking oil. Put the chicken breasts into the pan and fry them at medium-high heat for about eight to ten minutes. (Flip the chicken breasts from time to time.) After this, slice the chicken breasts into bite-size pieces, then transfer them into a bowl. Add 2 medium size potatoes cut into cubes, 1 can of mushroom soup, 1 cup sour cream, 1 cup grated cheddar cheese, and some more salt and pepper to taste. Mix them well.

Transfer the mixture to a casserole dish. Spread them across evenly but not too much for the rustic look. After this, place the casserole dish in the oven and bake at 350 F for about 45 minutes. After 45 minutes, get the casserole dish out of the oven and put another cup of grated cheddar cheese over the top. (You don’t have to put it back in the oven, the cheese will melt on its own.) Sprinkle some parsley flakes on top and your chicken and potato casserole is now ready.
