Though this meal recipe idea may sound too simple, you will be surprised by how good it tastes! It’s hearty and is filled with chicken and pasta, the seasonings are perfectly balanced, and the overall flavor goes well with each other. Ingredients for Chicken Penne Pasta:

  • 1 (10.5 ounces) can of condensed cream of celery soup, not diluted
  • ½ cup of milk
  • ½ cup of low-sodium chicken broth or water
  • ½ tsp of kosher salt
  • ¼ tsp of ground black pepper
  • ¼ tsp of garlic powder
  • ½ cup of diced onion (I used frozen diced onion as a shortcut)
  • 1 cup of sliced fresh mushrooms
  • ½ cup of red bell pepper, diced
  • 2 celery stalks, diced
  • ½ pound of boneless, skinless chicken breasts, diced into bite-sized pieces
  • 1½ cups of uncooked penne pasta
  • 1 cup of grated sharp cheddar cheese, divided

How to Make Chicken Penne Pasta:

Step 1

Preheat your oven to 425°F, then grease an 8-inch square baking dish with a nonstick cooking spray, and set it aside. In a large mixing bowl, add the condensed soup, milk, chicken broth, salt, pepper, and garlic powder, then whisk everything until well combined.

Step 2

Add the onion, mushrooms, bell pepper, celery, chicken, pasta, and half of the cheese, then give them a good stir until incorporated, and transfer the mixture to the prepared baking dish.

Step 3

Spread it evenly, then cover it tightly with a sheet of aluminum foil, and allow it to bake for about 45 minutes. Remove the foil, then stir it well, and check if the pasta is al dente, if not, put it back in the oven to bake for a couple more minutes.

Step 4

Once al dente, sprinkle the remaining half of the cheese all over the top, then put it back in the oven uncovered, and let it bake for about 5 to 10 minutes or until the pasta is tender, the chicken is cooked through, and the cheese has melted. Serve and enjoy!
