Ingredients:

Mashed potato layer:

  • 8 – 10 medium russet potatoes (peeled and diced small)
  • 1/2 tbsp salt
  • water to fill the pot
  • 1/2 cup shredded cheese
  • 1/2 cup of milk
  • 2 tbsp of butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Chicken layer:

  • 2 – 3 cups of shredded or diced cooked/rotisserie chicken

Gravy layer:

  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup of chicken broth
  • 1 cup of milk
  • 1 (0.87 oz) package of chicken gravy seasoning mix
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt (to taste)

Garnish:

  • fresh parsley

Directions:

Step 1

Peeled and diced 8 – 10 russet potatoes. Rinse it off, then transfer it to a large pot with water. Place it on the stove over high heat. Add 1/2 tsp of salt to season the potatoes. Once it boils, lower the heat to medium, then let it simmer until fork tender. While the potatoes are cooking, go ahead and start preparing the other ingredients. Cut the rotisserie chicken into bite-size pieces, transfer it to a bowl, then set it aside. Next, in a large mixing jug, add 1 can of cream of chicken soup, one cup of chicken broth, one cup of milk, and one packet of chicken gravy. For additional flavor, add 1/4 tsp of black pepper, 1/4 tsp garlic powder, and 1/4 tsp onion powder. Whisk it together well to combine.

Step 2

Drain the potatoes, then add 1/2 cup of shredded cheese, 1/2 cup of milk, 3 tbsp of butter, 1/4 tsp salt, and 1/4 tsp of black pepper. Mashed it all up using a handheld potato masher. Next, spray some cooking spray into your casserole dish, then spread the mashed potatoes evenly at the bottom of the casserole dish. Take the chopped chicken and sprinkle it over the mashed potatoes, then pour the gravy all over the top. Cover the casserole with some foil and place it in a preheated oven of 350 degrees F. Bake it for 30 to 35 minutes. After baking, garnish it with some chopped fresh parsley.
