Ingredients:

  • 2 tbsp of olive oil
  • 1 red onion, finely chopped
  • 2 cloves of garlic, finely minced
  • 1 green bell pepper, or other colors, cut into ½-inch cubes
  • 1 pound of ground beef
  • 1 (14-ounce) can of red kidney beans or black beans, drained
  • 1 cup of tomato passata
  • 1/3 cup of pickled sliced jalapeño
  • 1½ cups of Colby cheese, shredded 

Mexican Spice Mix

  • 1½ tsp of cumin powder
  • 1½ tsp of smoked paprika
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of dried oregano
  • ½ tsp of cayenne pepper or black pepper
  • 1 tsp of cooking or kosher salt

Directions:

Step 1

Preheat your oven to 200°C or 400°F, then place a cast-iron skillet pan on a stove over medium-high heat, and heat up the olive oil. Add the chopped onion, minced garlic, and diced bell peppers, then give them a good stir, and saute for about 3 minutes. Add the ground beef, then break them apart, and allow them to cook until nice and brown.

Step 2

Season them with cumin powder, smoked paprika, garlic powder, onion powder, dried oregano, cayenne pepper, and salt, then give them a good mix until well combined, and allow them to cook for 1 more minute.

Step 3

Now, add the kidney beans and tomato passata or puree, then stir them all together until well combined, and allow them to simmer. Add the jalapeño all over the top, then top them with cheese as well, and place it in the preheated oven. Let it bake for about 15 minutes uncovered, then serve, and enjoy!
