These onion rings are super crispy on the outside and oozing with delicious melted cheese on the inside, a perfect combination you never thought you needed. You can serve this when you have friends coming over or bring it to potlucks if you want!
Step 1
Slice the mozzarella cheese into ½-inch-thick pieces, cut them into ½ inch strips, and arrange them over a kitchen towel. Place another kitchen towel on the cheese strips, press it down lightly to absorb all the excess water, and set them aside. Peel off the skin of the onions, then slice them into ½ thick round pieces, and separate the rings.
Step 2
Line a baking sheet with parchment paper, then place a small onion ring in the center of a larger one as shown in the video, and repeat the same steps with all of the remaining rings. Place a strip of mozzarella cheese in between the gap of the rings, then put them in the freezer, and allow them to freeze for at least 1 hour.
Step 3
Prepare the flour, eggs, and breadcrumbs in three separate bowls, then whisk the eggs, and season the breadcrumbs with salt, black pepper, and paprika making sure to stir them well to combine.

Step 4
Coat each frozen ring in the flour, then dip them in the eggs, and roll them into the breadcrumb mixture. Dip them in the eggs again and then in the breadcrumbs one last time.
Step 5
Place all the breaded rings on a baking sheet lined with parchment paper, then put them back in the freezer until ready to fry. Place a large pot on a stove over medium heat, then fill it with oil, and allow it to heat up until it reaches a temperature of 350°F.
Step 6
Deep fry the frozen rings in batches to not overcrowd the pan, then cook them for about 4 minutes or until golden brown, and make sure not to over-fry to prevent the cheese from oozing out. Place the fried rings on a plate lined with a paper towel to drain off the excess oil, then serve immediately, and enjoy!
