I’ve never been a huge fan of cauliflowers, I do eat them when cooked a certain way, but I’m very picky with how they are served. One of my favorite ways to cook or serve cauliflower is by baking it with lots of cream and cheese, just like this recipe by The Cooking Foodie on YouTube.

I can eat a lot of servings of this cheesy cauliflower bake and I think it’s one the best veggie dishes out there. If you want to take this recipe to the next level or make it even more special, then feel free to add more fillings or toppings of your choice, and adjust the seasonings to your preference.
Step 1
Fill a large pot with water, then add a tablespoon of salt, and bring it to a boil. Add the cauliflower florets, then cook them for about 5 minutes, drain off all the water, and set them aside. Preheat your oven to 400°F, then place a saucepan on a stove over medium heat, and melt the butter. Add the crushed garlic and saute for about 1-2 minutes, then add the flour, and cook it while stirring consistently for about 1 minute.
Step 2
Pour in the milk gradually while whisking continuously, then keep cooking over medium-low heat until the sauce has thickened, and remove it from the heat. Add the salt, pepper, paprika, Dijon mustard, and cheddar cheese, then stir them until melted and combined.
Step 3
Spread the cauliflower florets on the bottom of a baking dish in an even layer, then pour the sauce over it, and stir them until evenly coated. Sprinkle some grated cheddar and parmesan cheese on top, then place it in the preheated oven, and let it bake for about 25 to 30 minutes or until golden and bubbly. Serve and enjoy!
