Ingredients for Poor Man’s Cheeseburger Wellington:

  • 6oz of frozen puff pastry
  • 1 slice of bacon, cut in half
  • 8oz of ground beef
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Cayenne pepper, to taste
  • 1 tbsp of sharp cheddar cheese, shredded
  • 1 large egg

How to Make Poor Man’s Cheeseburger Wellington:

Step 1

Place a large skillet on a stove over medium-high heat, then cook the bacon for about 10 minutes while turning occasionally until both sides are nice and brown. Transfer the cooked bacon to a plate lined with paper towels to drain off the excess oil, then remove the bacon grease on the pan, and wipe it lightly.

Step 2

Shape the ground beef into a patty until about 1 inch thick and 4¼ inch wide in diameter, then season both sides with salt, pepper, and cayenne, and sear the patty in the skillet for about 2 minutes per side. Transfer the cooked burger to a plate, then let it cool slightly, before placing it in the refrigerator to cool completely.

Step 3

Meanwhile, take the puff pastry out of the freezer, then roll it into 1/8 inch thick, and cut out a 5¼-5½ inch round for the bottom. For the top, cut out a 7¼-7½ inch round, then place both doughs in the freezer, and let them freeze until firm.

Step 4

Cut a small hole in the middle of the top dough piece, then lightly score the surface as shown in the video, and put it back in the freezer to keep it cold. Take the bottom piece of dough from the freezer, then place the cooked burger on top, and put the cooked bacon over it.

Step 5

Place the shredded cheese over the bacon, then brush the edges of the dough with beaten egg and water mixture, and then place the top piece of dough on top to cover the fillings nicely. Press the edges of both doughs together and seal them tightly, then put them back in the fridge to chill for 20 more minutes, while waiting, preheat your oven to 450°F.

Step 6

Crimp the edges of the pastry with a fork, then brush the top surface with eggwash, and bake it in the preheated oven for about 20 to 22 minutes or until nicely browned. Once done baking, transfer it to a wire cooling rack, then let it cool for about 5 minutes, and serve. Enjoy!
