Potatoes are insanely good and they taste delicious however you cook or serve them, same with cheese, they just make any food so much better! Imagine when they are combined together in one recipe, they can make something super addicting and truly delightful that you won’t be able to stop eating. Ingredients:

  • 3 large potatoes
  • 2 medium eggs
  • ¼ bunch of parsley or green onion
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tsp paprika
  • Cheddar cheese, cubed

For Coating

  • ½ cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • Oil, for frying

Directions:

Step 1

Place a large pot on a stove over medium-high heat, then fill it with water, and sprinkle some salt. Put the potatoes in the pot, then bring them to a boil, and allow them to cook until fork tender. Once done baking, peel off the skin of the potatoes, then mash them together, and let them cool down. Beat the eggs and add them to the mashed potatoes along with the salt, pepper, paprika, garlic powder, and chopped parsley, then mix them all together until combined and incorporated. Place it in the refrigerator to chill for about 30 minutes before frying. Once ready, scoop the potato mixture into tablespoons, then flatten each, and place a cube of cheddar cheese in the center of each one.

Step 2

Wrap the sides of the potato around the cheese cube, then shape it into a smooth ball, and set them aside. In 3 separate bowls, add the flour, beaten eggs, and breadcrumbs, then start coating the potato ball in the flour first, then dip it in the egg, and then coat it with breadcrumbs. Place a medium-sized pan on a stove over medium-high heat, then add the oil, and let it heat up to 360°F or 180°C. Add the potato balls to the hot oil, then allow them to cook in batches to not overcrowd the pan, and fry them for about 2 to 3 minutes until golden brown on all sides evenly. Transfer the fried potato balls to a plate lined with a paper towel to drain off all the excess oil, then serve it while warm, and enjoy!
