This is also very easy and quick to prepare which makes it a convenient food choice or recipe, especially if you’re too busy or too tired to make a side dish.
Lemon Tahini Dressing
Spiced Chickpeas
Step 1
Preheat your oven to 400°F, then line a baking sheet with parchment paper, and set it aside. Place the cauliflower and red onion in a large bowl, then drizzle the olive oil, and season them with salt and pepper to taste. Give them a good toss, then transfer the cauliflower to the prepared baking sheet, and spread them in a single layer evenly.
Step 2
Place them in the preheated oven to roast for about 20 minutes, then flip them over halfway through the cooking time to cook them evenly, and while waiting, prepare the tahini dressing. In a blender, add the tahini, water, lemon juice, garlic, cumin, cayenne, and salt, then blend them until smooth and combined, and put it in the refrigerator to chill until ready to use.
Step 3
Place a large skillet on a stove over medium-high heat, then add the olive oil, and heat it before adding the chickpeas. Season them with smoked paprika, garlic powder, cayenne, salt, and pepper, then give them a good stir to combine, and cook them for about 5 minutes or until slightly crispy while stirring consistently.
Step 4
Transfer the roasted cauliflower to a serving bowl, then add in the cooked chickpeas, and drizzle the dressing all over the cauliflower and chickpeas. Gently toss everything together until evenly coated and combined, then garnish with crumbled feta cheese, and serve. Enjoy!
