Base
Caramel filling
Chocolate Topping
Step 1: Base
Preheat your oven to 180°C or 350°F, then grease a 7×11 inches rectangle pan, and line it with baking or parchment paper making sure to leave excess hanging on the sides for easier removal. In a large mixing bowl, add the flour, brown sugar, desiccated coconut, and unsalted butter, then mix them all together until well combined and incorporated, and then transfer everything to the prepared pan. Press it down the bottom evenly, then put it in the preheated oven, and allow it to bake for about 15 minutes or until the surface is golden. Once it has cooled down a bit, put it in the fridge, and let it chill while preparing the rest of the ingredients.

Step 2: Caramel
Lower the temperature of the oven to 160°C or 320°F, then place a saucepan on a stove over medium-low heat, and put the butter, sugar, and vanilla. Once the butter is melted, whisk them all together to combine and dissolve the sugar, then allow it to simmer until bubbles start to appear, add the condensed milk, and continue to whisk consistently for about 5 minutes until it starts to form big slow bubbles. Once the bubbles start appearing, keep on whisking for about 1 minute, then pour it into the chilled base, and spread it evenly by tilting the pan. Put it in the oven and let it bake for about 12 minutes, then let it cool down on the counter for 20 minutes, and let it chill in the fridge for at least 30 minutes.
Step 3: Chocolate and Assembly
In a microwave-safe bowl, add the chocolate along with some oil, then put it in the microwave, and heat up the chocolate at 30-second intervals making sure to stir in between each interval until the chocolate is fully melted. Once done preparing the chocolate, pour it over the chilled caramel, then spread it evenly, and give the pan a good shake to make the surface completely flat. Put it back in the refrigerator, then let it chill for about 1 hour or until set, and once ready, remove it from the fridge. Leave it on the counter for about 5 minutes to let it cool down, then cut it into bars, and serve. Enjoy!
