Preheat your oven to 350F.
Make the crust. In a large bowl, add 2 cups of graham cracker crumbs, 1/8 cup of brown sugar, and 1/3 cup of melted butter. Mix everything until well combined. Press it into the bottom of a greased 8-inch pan and place it inside the preheated oven. Bake for about 5 minutes.
In a different bowl, add 16 ounces of softened cream cheese,1/4 cup of brown sugar, 1/4 cup of white sugar, 2 tablespoons of cornstarch, 1 teaspoon of cinnamon, 1/4 teaspoon of ginger, and 1 teaspoon of vanilla extract. Mix until well combined, then spread over the graham cracker crust.
Layer the apple slices on top of the filling.
In another bowl, combine 1/4 cup of rolled oats, 1/4 cp of flour, 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and 2 tablespoons of melted butter. Sprinkle it evenly over the apple layer. Place it inside the oven and bake for about 30 minutes.
