Watermelons are a staple fruit for the summer season and you’ll be surprised to know that not only the red part of the fruit itself is tasty but even the rinds! Instead of throwing them out immediately after you’ve cut up and eaten the sweet red part of the fruit, gather the rinds and use them to make a yummy candied treat. Ingredients:

  • 2 cups of leftover watermelon rinds, cut into bite-sized cubes
  • 1 cup of brown sugar

Directions:

Step 1

The first thing you have to do is to rinse the watermelon rinds well, then make sure that you drain off all the excess water. Peel the green skin of each watermelon rind, then cut them into small cubes and set them aside in a large mixing bowl. Place a pan on a stove over medium to medium-high heat, then let it heat up before adding the cubed watermelon rinds.

Step 2

Now, you can add the sugar all over the watermelon rinds, then reduce your heat setting to low, and start tossing the watermelon rinds until the sugar is evenly distributed and each cube of watermelon rinds is coated with sugar. Continue cooking them over low heat until the sugar has dissolved and is bubbly while stirring consistently to avoid burning at the bottom of the pan. You can stop stirring once it has reached your desired consistency, then turn off the heat, and transfer the candied watermelon rinds to a serving bowl. Serve and enjoy!
