Step 1
Clean and cut the chicken through in half as shown in the video, then drizzle some oil all over the chicken, and massage it in until nicely covered. In a small bowl, mix together your favorite seasoning with cajun seasoning, garlic powder, salt, and pepper until uniform, then sprinkle it over the chicken and season both sides nicely, and set them aside. Place a large pot filled with water on a stove over medium or medium-high heat, then add some chicken bouillon and salt to it, and bring it to a boil while covered before adding in the pasta shells. Let them cook for about 7 minutes, then remove them from the heat, drain off all the water, and rinse them with cool water.

Step 2
Place a pan on a stove over medium-high heat, then heat up some oil, and add the chicken in batches to not overcrowd the pan. Let them cook for about 5 minutes or until golden brown, then flip them over, and cook the other side as well. Remove them from the pan, then set them aside, and allow them to rest for a bit while preparing the sauce. In the same pan, add the heavy cream, then give it a good stir, and scrape the bottom to deglaze it. Add some mozzarella cheese and parmesan cheese, then stir them all together until melted and creamy, turn off the heat, and remove the pan from the stove.
Step 3
Now, chop the spinach and cooked chicken into very small pieces, then add them to a large mixing bowl along with the fire-roasted tomatoes, cream cheese, mozzarella cheese, and parmesan cheese, and give them a good toss until evenly combined. Grab a baking dish, then spread some sauce at the bottom, stuff the pasta shells with the filling, and place them on the dish. Pour the remaining sauce all over the pasta evenly, then sprinkle more mozzarella cheese and parmesan cheese. Place it in a preheated oven, then allow it to bake at 350°F for about 20 minutes or until the cheese is nice and melted. Serve and enjoy!
