Ingredients:

  • 2 boneless and skinless chicken breast
  • 16 ounces or 1 pound of fettuccine pasta
  • 1 cup of chicken broth
  • 1 cup of heavy whipping cream
  • 1 cup (3 ounces) + 1 cup (3 ounces) of parmesan cheese, shredded
  • 2 tbsp + 2 tbsp of butter
  • 5 cloves of garlic, minced
  • 1 tbsp of blackened seasoning
  • 1 tbsp of cajun seasoning
  • ¼ cup + ¼ cup of fresh parsley, chopped

Directions:

Step 1

Wash and clean the chicken breasts, then pat them dry, and then lay a piece of plastic wrap on the surface. Place the chicken breasts on top of the plastic wrap before placing another piece of plastic wrap on top, then start to flatten them with a meat tenderizer, and set them aside while you’re mixing some cajun seasoning and blackened seasoning together for the chicken rub. Once the seasoning is ready, sprinkle it evenly on both sides of each chicken, then lightly rub it in, and set aside. Cook the pasta according to the package instructions at this point as well. Heat up the skillet pan on a stove over medium-high heat, then add some butter, and let it melt before putting the seasoned chicken in the pan.

Step 2

Cook the chicken on both sides evenly until nice and crispy, then remove it from the pan, and set aside. In the same pan, add another butter, give it a good stir and cook for about 1 minute or until fragrant. Pour in the whipping cream and chicken broth, then stir them together to combine before adding the first portion of parmesan cheese and parsley, and mix them together until well combined. Once the sauce is thick and the cheese has melted, season it with salt, pepper, and cajun seasoning, then stir them well before adding the cooked and drained pasta. Let it cook for a few more minutes, then turn off the heat, and put the cooked chicken on top of the pasta, you can slice the chicken or leave it as is. Sprinkle the rest of the cheese and parsley on top, then serve, and enjoy!
