This soup recipe is packed with cabbage, carrots, celery, yellow onion, bell pepper, garlic, tomatoes, seasonings, and herbs. Eating healthy does not need to be boring. All you need to do is add the right ingredients and seasonings to bring out the flavors of the vegetables. I always enjoy making this soup as it comes easily. It is the perfect soup to warm you up during winter. But of course, you can still have it any day of the year.

Place a large pot over heat and add some olive oil. Add the carrots, celery, bell pepper, and onion. Stir and cover for 2 minutes.
Stir all the vegetables. Add the minced garlic, mix and cook for 2 minutes.
Mix in the diced tomatoes and half of the cabbage. Once it’s all mixed up, add the remaining cabbage.
Pour 3/4 of the chicken broth and cover for 15 minutes.
Season the soup with salt, pepper, chili flakes, chili powder, basil leaves, ground oregano, smoked paprika, and turmeric powder. Mix everything together, then pour the remining chicken broth. Mix, place the lid, and let it simmer for about 20 to 30 minutes.
