I’ve never enjoyed breakfast as much as I did when I cooked this recipe by 쿠킹하루 Cooking Haru 🙂 on YouTube, this cabbage quesadilla is so good that I couldn’t stop myself from eating it, and it was so healthy, too! Surely, once you’ve tasted this, you might even want to eat this every day, it’s that delicious.

Ingredients:

  • Cabbage, finely chopped
  • Eggs
  • Bacon, chopped into small bite-sized pieces
  • Tortillas
  • Parsley or green onion, finely chopped
  • Mozzarella cheese, or any kind of cheese, shredded
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Cut the cabbage into finely shredded pieces, then transfer them to a large bowl, and fill it with clean water. Wash the cabbage several times, then strain them well before placing them in a salad spinner, and spin them several times until all excess water is gone.

Step 2

Cut the bacon into small pieces, then place a skillet pan on a stove over medium heat, and spread some cooking oil all over with a brush. Once hot, add the chopped bacon, then toss them continuously, and cook them until nice and crispy. Turn off the heat, then transfer them to a plate or bowl, and set them aside for later.

Step 3

In a large bowl, add the eggs, salt, and pepper, then beat them well until combined and incorporated, and then add the finely chopped parsley, cooked bacon, and chopped cabbage. Mix them all together until well combined, then preheat a skillet pan on a stove over low heat, and brush it well with cooking oil.

Step 4

Once the oil is nice and hot, spread some of the cabbage mixture on the pan, then place a tortilla on top, and press it down lightly. Cook it until brown and crispy, then turn it over, and spread lots of shredded cheese on one side.

Step 5

Place some butter on the pan, then lift and push the butter underneath, and cook it until golden brown and crispy. Fold it over, then repeat the same process with the remaining cabbage mixture, and cut them. Serve and enjoy!
