Butterscotch pie is a very delicious dessert that I’m sure even those who are not huge fans of sweets will love. It’s a very simple pie to make but it tastes so good and special which makes it perfect to serve at parties, gatherings, or holidays, but you can also enjoy this on an ordinary day or whenever you feel like it.

Step 1
Blind bake your pie crust, then set it aside, and prepare the filling. Place a skillet pan on a stove over low heat, then melt and brown the butter, add the brown sugar, and let them boil until foamy while stirring consistently.
Step 2
Pour in a cup of boiling water, then keep stirring, and remove the pan from the heat. In a saucepan, add the cornstarch, flour, and salt, then gradually pour in the milk while stirring constantly, and stir in the brown sugar mixture.
Step 3
Place the saucepan on the stove over low heat, then stir continuously until the mixture is boiling, and let it continue to boil for 1 minute before removing from the heat. Stir some of the mixture into the egg yolks, then whisk them until incorporated, and boil it for an additional 1 minute.
Step 4
Remove the saucepan from the heat, then add the vanilla extract, and give them a good stir. Let the mixture cool, then stir occasionally, and then pour it into the baked pie crust. Place it in the refrigerator, then let it chill until set, and top it with whipped cream or meringue. Serve cold and enjoy!
