This classic cake will remind you why pecan pound cakes are the absolute best, and it is so yummy that you’d want to eat it every day, and I’m not even exaggerating, because I loved this recipe so much that it is now on my all-time favorite list.

Ingredients:

  • 3 cups of flour, sifted
  • ½ tbsp of baking powder
  • ½ tsp of salt
  • ½ packet of Jello
  • ¼ tsp of nutmeg
  • ½ tbsp of butter
  • 2 cups of pecan halves
  • 2 tbsp of maple syrup

Cake Batter

  • 2 sticks of butter
  • ½ cup of butter-flavored shortening
  • 2 cups of brown sugar
  • 6 eggs
  • 2 tbsp of vanilla extract
  • 1 cup of sour cream

Glaze

  • 8 ounces of cream cheese
  • ½ stick of butter
  • 3 cups of flour
  • 1 tsp of vanilla
  • 2 tbsp of heavy cream
  • Powdered sugar, as needed

Directions:

Step 1

In a large mixing bowl, sift over the flour, baking powder, salt, Jello powder, and nutmeg, then whisk them all together until combined and uniform, and set it aside. Place a skillet pan on a stove over medium-low heat, then melt the butter, and add the pecan halves. Stir and toast them, then add the maple syrup, and continue to stir until combined before turning off the heat. Transfer the toasted pecan to a food processor, then process them until large chunks, and reserve some for later.

Step 2

Continue to process the remaining pecan until sand-like texture, then transfer it to a bowl, add 2 tablespoons of the flour mixture, and toss them together until well combined. Prepare the cake batter in the bowl of a stand mixer, add the butter and butter-flavored shortening, then beat them together until creamy, add the brown sugar, and continue to beat for about 5 to 7 minutes or until nice and fluffy making sure to scrape the sides.

Step 3

Add the eggs, vanilla extract, butter extract, flour mixture, nut mixture, and sour cream a little at a time while beating slowly and continuously until well combined. Generously grease the bundt pan with nonstick cooking spray, then sprinkles some of the reserved nuts all over the bottom of the pan, and pour the cake batter spreading it evenly. Place the cake in the preheated oven, then allow it to bake at 325°F for about 1.5 hours or until a toothpick inserted at the center comes out clean, check the cake if it starts to get too browned at the top, and cover it with foil if needed.

Step 4

Once done baking, unmold the cake and flip it upside down on a wire cooling rack, then allow it to cool down, and pour the chilled glaze all over the cake decorating it nicely. To make the glaze, simply beat together the cream cheese and butter in a large mixing bowl, then add the flour, vanilla, and heavy cream while beating continuously until combined, and then incorporate the powdered sugar until desired sweetness is achieved. After frosting the cake, sprinkle the remaining reserved nuts, then chill if you want or serve immediately, and enjoy!
