Ingredients for Buffalo Chicken Salad:
- 2 cups of cooked chicken breast, chopped and shredded
- ½ cup of celery, diced
- ½ cup of onion, diced
- 1/3 cup of carrot, diced
- ¼ cup of low-fat Greek yogurt
- 1 tbsp of mayonnaise
- 2 tbsp of buffalo hot sauce, or more for later
- ¼ tsp of sea salt
- ¼ tsp of black pepper
- 8-10 butter lettuce cups
- Blue cheese dressing
- Desired additional toppings, optional
How to Make Buffalo Chicken Salad:
Step 1
Prepare all of the veggies, then cut or shred the chicken, and add the meat to a medium-sized mixing bowl. Add in the diced onion, celery, and carrots, then add the Greek yogurt, mayonnaise, and hot sauce, and season them with salt and pepper.
Step 2
Toss everything until well combined, then scoop the salad into lettuce cups, and drizzle them with more hot sauce along with some blue cheese dressing, you can also add any toppings that you want. Serve and enjoy!
