I have a family of picky eaters, and they absolutely dislike veggies. That is why I’m so thankful I’ve stumbled upon this broccoli casserole recipe from Allrecipes on Youtube because this is the only veggie recipe they like. I mean, who wouldn’t love this casserole? It’s so cheesy and flavorful; even picky eaters would start to love broccoli. This is one of our favorite side dishes, and I love it because it’s so easy to put together. Preheat your oven to 350 degrees F and grease your baking dish with butter. Set aside. Next, to a large bowl, add 1 can (10.5 oz) condensed cream of mushroom soup, 1/2 cup mayonnaise, 1/2 cup sour cream, 1 beaten egg, and 1/4 cup finely chopped onion. Mix well together to combine. To that, add 2 lb of lightly steamed fresh broccoli florets and 8 oz shredded sharp cheddar cheese. Season with salt, ground black pepper, and paprika to taste. Gently toss all the ingredients together to combine.

After this, transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle with some crushed potato chips or buttered crackers on top for a crunchy topping. Put the casserole in the preheated oven and bake for 30 to 40 minutes if using fresh broccoli and 45 to 60 minutes if using frozen broccoli. Serve and enjoy!
