Ingredients:

  • 2 cups of cooked rice
  • 1 (16 ounces) pack of frozen cut broccoli, thawed
  • 1 small onion, diced
  • 2 tbsp of butter or olive oil
  • 1 tbsp of garlic, minced
  • 2 (10 ounces) can of cream of mushroom or chicken soup
  • ¾ cup of sour cream
  • 1 tbsp of ranch dry seasoning
  • 1 tbsp of mayonnaise
  • 2 cups of sharp cheddar cheese, shredded
  • ¼ cup of milk
  • Onion and garlic powder, to taste
  • Salt and pepper, to taste

Directions:

Step 1

In a heated pan, add in the oil or butter and let it melt, then saute and cook the onions for about 2 minutes or until they become translucent. Add in the garlic and cook it for 30 seconds before adding in the cream of mushroom or cream of chicken soup. Then, add in your thawed broccoli and cook thoroughly for about 5 minutes. Then stir in the cooked white rice and mix until well combined. Add in the ranch seasoning, mayonnaise, sour cream, garlic powder, onion powder, creole seasoning, or your favorite seasoning. Give it a good stir.

Season it with salt and pepper to taste before adding in a cup of shredded cheddar cheese, then pour in the milk, and stir until fully combined. Prepare a 9×13 dish and grease it with butter. Pour in the mixture and sprinkle the remaining cheese on top. Bake it in a preheated oven at 350°F uncovered until the cheese melts and becomes bubbly.
