Ingredients:

  • 1 medium flour tortilla
  • 2 eggs
  • 2 bacon strips
  • 1 cup baby spinach leaves
  • 1/2 cup shredded Mexican cheese blend
  • 1 tsp balsamic glaze
  • 1/2 tsp garlic powder
  • salt and pepper

Directions:

Step 1

In a pan, cook a batch or two slices of bacon until crisp over medium heat. After frying, transfer the bacon to a paper towel-lined plate to drain off the excess oil. Next, in the same pan, add 1 cup of baby spinach leaves and 2 slices of bacon that have been cut into small pieces. Season with 1/2 tsp garlic powder, freshly ground black pepper and 1 tsp balsamic glaze. (Salt is optional.) Mix it until spinach is just wilted. After this, in a mixing jug, crack 2 eggs, then season with salt and pepper. Whisk until smooth and combined.

Step 2

Preheat the pan over medium heat, then reduce it to medium-low. Pour the egg mixture into the pan. (You can tilt the pan to distribute the egg mixture evenly around.) While the top of the egg is still wet, place the tortilla over it. Gently press the tortilla so that it sticks to the egg mixture. When the bottom is set, turn it over carefully. After turning it, spread the sauteed spinach and bacon over the eggs, then sprinkle 1/2 cup of shredded Mexican cheese blend over. Cover the pan and cook until the cheese is melted and the tortilla is crispy. After the cheese is melted, remove it from the pan and transfer it to a flat surface. Roll it up, gently pressing down on the ingredients. Cut it in half and serve it warm. (You can also let it cool off and refrigerate or freeze.)
