Note: for the veggies used in this recipe: 2 tablespoons of chopped onions, 2 tablespoons of grated carrots, 1 teaspoon of chopped tomatoes, 3 tablespoons of mixed capsicum

Add 6 medium-sized eggs, salt, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper to a mixing bowl. Beat using a whisk. Next, add 4 tablespoons of milk or cream. Stir until well combined.
Place a pan over medium heat then add 1 tablespoon of butter. Once melted, add your mixed veggies, 2 tablespoons of chopped chicken sausage, salt, and pepper to taste. Mix all ingredients well. Make sure to not overcook them. Once done, turn off the heat.
Transfer the sauteed vegetables and sausages into a big bowl. Add 1/4 cup of grated cheese then pour the egg mixture. Mix until well combined.
Grease your muffin tray then pour the mixture in. Once done, top with grated cheese.
Place in the oven and bake at 350 degrees F or 180 degrees C for about 15 minutes. After that remove from the tray and place on a plate. Serve and enjoy!
