Ingredients for Blueberry Slab Pie:
- 2 boxes of refrigerated pie crusts, 4 crusts in total
- 4 cups of fresh blueberries
- ½ cup of granulated sugar
- 3 tbsp of cornstarch
- 1 tsp of ground cinnamon
- 1 tsp of grated lemon peel
- ¼ tsp of ground cloves
- 1 egg, beaten
How to Make Blueberry Slab Pie:
Step 1
Preheat your oven to 400°F, then unroll and place a stack of 2 pie crusts on a lightly floured surface, and roll them to a 17×12-inch rectangle. Lay the crust on a 15x10x1-inch pan pressing it to the corners and then set it aside.
Step 2
In a large mixing bowl, add the sugar, cornstarch, cinnamon, cloves, and lemon peel, then whisk them until fully combined, and set the mixture aside. Put the berries on the prepared crust spreading them evenly, then stack the 2 remaining crusts, and roll them to a 17×12-inch rectangle.
Step 3
Cut it into ½-inch wide strips, then place half of the strips across the pan diagonally, and weave the remaining strips to form a lattice. Trim the edges off evenly, then roll the pastry up to seal the edges, and flute or crimp the edges.
Step 4
Brush the top with beaten egg, then sprinkle some more sugar if desired, and place the pie in the preheated oven. Allow it to bake for about 35 to 40 minutes or until the crust is deeply golden and the filling is bubbly, then let it cool completely, and serve. Enjoy!
