Ingredients for Blueberry Cake:

Batter

  • ½ cup of white sugar
  • eggs
  • 3 tbsp of salted butter, melted
  • 1 tsp of vanilla extract
  • ¾ cup of buttermilk or milk
  • 1½ cups of self-rising flour

Blueberries

  • Blueberries, frozen or fresh
  • ½ cup of chopped pecans
  • 4 tbsp of salted butter, melted
  • 1/3 cup of sugar

Step 1

In a large mixing bowl, add the white sugar and melted butter, then beat them together to combine, and add the vanilla extract, milk, and flour while beating continuously.

Step 2

Once the batter is smooth and combined, set it aside, and grease the baking pan with nonstick cooking spray. Place the blueberries in the prepared pan and spread them in a single layer, then sprinkle the sugar over them evenly, and drizzle the melted butter.

Step 3

Pour in the batter over the blueberries, then spread it on the sides evenly, and then put it in a preheated oven at 350°F to bake for about 25 to 30 minutes until nice and golden brown. Once done baking, remove it from the oven, then let it cool for about 5 minutes, and flip it over in a serving plate or dish. Serve and enjoy!
