Ingredients:

Crumble

  • 2 cups of all-purpose flour
  • ¼ teaspoon of fine salt
  • ¾ teaspoon of baking powder
  • ¾ cup of white sugar
  • ¾ cup or 1½ sticks of frozen unsalted butter, grated
  • 1½ teaspoon of vanilla extract
  • 2 large egg yolks
  • 1 to 2 teaspoons of apple cider vinegar, or enough for the dough to clump

Fruit mixture

  • 3 generous cups of fresh berries
  • 1 teaspoon of lemon zest
  • 2 teaspoons of fresh lemon juice
  • 1/3 cup of white sugar
  • 1 to 4 teaspoons of cornstarch, depending on how firm you want the fruit filling
  • Pinch of cayenne

Directions:

Step 1

In a large bowl, combine the all-purpose flour, salt, baking powder, and sugar, then whisk them together until thoroughly combined. Grate an ice-cold butter over it, stir it with a fork for a little bit, then go ahead and continue grating the butter, mix it again with a fork until fully coated. Drizzle vanilla extract, add in the egg yolks, then mix it again with a fork until it’s almost together in clumps, stop stirring, and add apple cider vinegar, briefly mix with a fork for only about 30 seconds. Then, switch and use your hands to rub the ingredients together, once you squeezed and it clumps then you’re done. If it’s not clumping add another teaspoon of vinegar or water until clumping together.

Step 2

In another large bowl, add in the cups of berries, then add the zest of a lemon, add in lemon juice, white sugar, cornstarch, and cayenne. Mix them together using a spoon until well combined. Transfer half of the crumble mixture at the bottom of a baking dish or 2-quart casserole, then press it down and flatten. Place and press half of the fruit mixture and distribute it well and evenly, sprinkle small fine crumb mixtures on top, then grab a large portion, squeeze with your hands, then lightly break as you top it on the fruit mixture. Bake it in a preheated oven at 375°F for about 40 to 45 minutes or until the top is brown.
