Ingredients for Beer Cheese Soup:

  • ½ pound of bacon, roughly chopped
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, diced
  • 3 cloves of garlic, minced
  • 1 tsp of smoked paprika
  • ½ tsp of dried thyme, chopped
  • ½ tsp of red pepper, flakes
  • Salt and pepper, to taste
  • A dash of hot sauce
  • 4 tbsp of butter
  • ¼ cup of all-purpose flour
  • 12 oz of lager-style beer
  • 2 cups of chicken broth
  • 2 cups of heavy cream
  • 12 oz of shredded cheddar cheese

For garnish

  • Shredded cheddar cheese
  • Freshly chopped parsley or green onions
  • Red pepper flakes
  • Crumbled bacon

How to Make Beer Cheese Soup:

Step 1

Place a large pot on a stove over medium heat, then cook the bacon for about 6 to 7 minutes or until nice and crispy, and then set it aside on a plate lined with paper towels to drain off the excess oil. Remove most of the grease from the pan leaving only about 1 to 2 tablespoons, then add the onion, bell pepper, and jalapeno pepper, and cook them for about 5 minutes or until softened.

Step 2

Add the garlic and cook them for an additional minute or until fragrant, then add the smoked paprika, thyme, red pepper flakes, salt, pepper, and hot sauce, and give them a good stir to combine. Add the butter and stir it until melted, then mix in the flour, and cook them for 2 to 3 minutes while constantly stirring. Pour in the beer, then stir them well, and cook for 2 to 3 minutes until thickened.

Step 3

Pour in the broth and heavy cream, then reduce the heat to a simmer, and let the mixture simmer for about 10 minutes. Add the shredded cheese a little at a time making sure to stir well in between each addition, then allow them to melt completely, and them mix in the cooked bacon. Turn off the heat and remove the pan from the stove, then garnish with freshly chopped herbs, red pepper flakes, crumbled bacon, and shredded cheese, and serve. Enjoy!
