This beef tenderloin roast will be the star of your holiday dinner table! The meat is coated in a delicious garlic herb butter and cooked until perfectly tender with a medium-rare pink color. It’s so flavorful and satisfying, making it a crowd favorite at any gathering.

There are plenty of dishes that pair well with beef tenderloin. You can choose from mashed potatoes, creamed spinach, roasted vegetables, honey-glazed carrots, french fries, or green beans. Be prepared to receive a ton of compliments when you make Downshiftology‘s foolproof recipe at home.
For the garlic herb butter:
Let the beef tenderloin come to room temperature before cooking. This will take about 1 to 2 hours.
In a small bowl, add butter, garlic, rosemary, and thyme. Mix until well combined then set aside.
Preheat your oven to 425F. Cut the beef tenderloin in half, then trim and tie it up.
Remove any excess moisture from the meat by patting it with paper towels, then season both sides with salt and pepper.
Add oil in a large cast-iron pan and place over medium-high heat. Once shimmering, add beef tenderloin and cook for a few minutes until browned on all sides. This will take about 10 minutes in total.
Spread the butter herb mixture over the top side of the meat, then place the entire pan in the oven. If using a probe thermometer, insert it into the beef tenderloin before placing it in the oven. Roast for 15 to 20 minutes, depending on your preferred doneness.
Once done roasting, transfer the beef tenderloin to a cutting board and let it rest for 10 to 15 minutes, allowing the juices to redistribute.
Remove the twine and slice the beef tenderloin into 1-inch thick pieces.
