A few days ago, I’ve been noticing that we would often have leftover rice and nobody wants to eat it because they’d prefer newly cooked rice over the day-old ones. So, instead of letting them go to waste, I thought that maybe I could make them delicious again and turn them into a dish that my family can never say no to, and that’s when I found this recipe by RecipeTin Eats on YouTube. So I saved some cooked rice on purpose and immediately tried this yummy recipe the next morning, and I was so happy because my family loved it so much. I don’t think I would have problems with leftover day-old rice anymore with this recipe.

Ingredients:

Sauce

  • 1 tbsp dark soy sauce
  • 2 tsp light soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp Chinese cooking wine
  • ½ tsp white sugar
  • 1/8 tsp pepper

Scrambled Eggs

  • 1 tsp sesame oil
  • 2 eggs, lightly whisked

Fried Rice

  • 2 tbsp oil
  • ½ onion, finely diced
  • 2 garlic cloves, finely minced
  • ½ pound ground beef
  • 2 cups frozen carrots, peas, and corn
  • 3 cups of day-old cooked rice
  • ½ cup finely sliced green onions

Directions:

Step 1

In a small mixing bowl, add the dark soy sauce, light soy sauce, oyster sauce, cooking wine, white sugar, and pepper, then mix them all together until well combined and uniform, and set the sauce aside for later. Place a large wok or non-stick pan on a stove over medium-high heat, then heat up some sesame oil, and add the egg. Stir the egg gently and let it cook until soft and fluffy, then transfer it to a plate. In the same pan, add more vegetable oil and let it heat up, then add the onion and garlic, and give them a good stir letting them cook for about 30 seconds. Next, add the beef, then break it apart and toss letting it cook for about 2 minutes or until nice and brown.

Step 2

Add 2 tablespoons of the prepared sauce, then mix, and allow it to cook for 1 more minute. Add the frozen vegetables, then give them a good mix, and allow them to cook for about 2 more minutes or until the beef is caramelized. Now, add the rice followed by the remaining sauce, then give them a good toss, and let them cook for about 2 minutes or until the sauce has reduced and the rice starts to caramelize. Put the scrambled egg back into the pan, then add the green onion, and give them a good toss to combine. Transfer the fried rice into serving bowls evenly, then serve, and enjoy!
