Got enough time to make a delicious dinner for tonight? Go French classic and make this beef bourguignon from RecipeTin Eats on Youtube. This stew recipe is made with beef, bacon, and veggies. It also has an amazing combination of herbs and spices and is slow-cooked in red wine sauce. It may sound a lot, but I’m telling you, this rich stew will be permanent in your home cooking in no time. 

Ingredients:

Beef marinade:

  • 1.6 lb chuck beef (cut in 2″ cubes)
  • 2 large carrots (cut into 2″ pieces)
  • 16 pearl onions (or small round pickling onions)
  • 1 bay leaf (fresh)
  • 3 sprigs of thyme
  • 25 oz pinot noir (or other red wine)

Browning beef:

  • 3 tbsp oil
  • 3/4 tsp salt
  • 1/2 tsp pepper

For the stew:

  • 7 oz mushrooms (halved)
  • 5 oz bacon piece (cut into 1/2″ thick batons)
  • 3 tbsp unsalted butter
  • 3 garlic cloves (minced)
  • 2 tbsp tomato paste
  • 6 tbsp flour (plain or all-purpose)
  • 3 cups beef stock (low sodium)
  • 1/4 tsp salt
  • 2 tbsp chopped parsley

Directions:

Step 1

In a bowl, add the cubed beef chuck, onions, chopped carrots, red wine, fresh bay leaf, and thyme. Mix well and marinate for 12 to 24 hours. After this, strain from the liquid and pat the cubed beef to dry. Once the cubed beef are completely dry, season them with salt and pepper. Set aside. Next, put the red wine sauce in a pot and boil it, then reduce the heat. In another saucepan, heat some oil and fry the cubed beef and bacon until browned. Now, saute the mushrooms and onion separately using the same pan.

Step 2

Melt some butter again, then add the carrots, minced garlic, and tomato paste. Mix well. Next, add the flour and mix until the flour is no longer visible. Slowly pour the wine mixture followed by the beef stock while stirring continuously. Add the beef, bacon, thyme, bay leaf, and salt and pepper into the pot. Mix well. Bring everything to a simmer, then cover the pot and place it in the oven for one hour. After an hour, stir in the onions and mushrooms. Cover again and return to oven for 1 hour.
