Ingredients:

  • 1 (32-ounce) can of pinto beans, drained and rinsed
  • 1 (32-ounce) can of cannellini or white kidney beans, drained and rinsed
  • 1 (16-ounce) can of red kidney beans, drained and rinsed
  • 1 pound of thick-cut bacon, divided
  • 1 small yellow onion, diced
  • 1½ cups of ketchup
  • 1 cup of packed light brown sugar
  • ½ cup of molasses, preferably not blackstrap molasses
  • 2 tbsp of Dijon mustard
  • 1 tsp of black pepper

Directions:

Step 1

Preheat your oven to 350°F, then rinse and drain the beans before pouring them into a 9 by 13 inches baking dish, and setting it aside. Reserve some of the bacon to cover the top later, about 5 slices, then cut the remaining slices into small bite-sized pieces, and chop the onions as well. Place a medium-sized saucepan on a stove over medium-high heat, then add the bacon and onions, and cook them for about 3 minutes.

Step 2

Next, add the ketchup, brown sugar, molasses, mustard, and pepper, then whisk them together until well combined, and remove from heat. Pour the sauce over the beans on the baking dish, then gently stir them together until combined and incorporated, and chop the reserved bacon slices into small bite-sized pieces before topping them all over the bean mixture. Put the beans inside the preheated oven and let them bake for about 60 minutes or until the sauce has thickened and the bacon is cooked through. Serve on the side of your favorite dish and enjoy!
