Ingredients:

  • 1 & 3/4 cups (430g) cream cheese, room temperature
  • 1 cup (120g) caster sugar
  • 3 large eggs, room temperature
  • 1 cup (270g) heavy or thick cream
  • 1/4 cup (20g) cake flour
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Directions:

Step 1

Line a 6″ round baking tin with 2 layers of parchment paper and set it aside. Next, in a bowl, combine 1 & 3/4 cups of cream cheese and 1 cup of caster sugar. Whisk the cream cheese mixture until smooth in a stand mixer. While whisking, add 3 cracked large eggs at a time, then add 1 tsp vanilla extract and 1 tsp lemon juice.

Step 2

After this, in a mixing jug, combine 1/4 cup cake flour and 1 cup heavy cream. (Divide the heavy cream and add it at a time to prevent lumps while mixing.) Add the heavy cream mixture into the cream cheese mixture and continue mixing to combine. Next, pour the mixture into the prepared baking tin. Place it in the oven at 475 degrees F and bake for 35 minutes or until deep bronze on top with wobbly middles. After baking, let it cool completely before removing it from the baking tin.
