This recipe by The Danni Rose on YouTube is one of my favorite banana pudding versions, I’ve been making this quite often, and I never get tired of eating them! The filling is so creamy and rich, plus the homemade butter syrup makes it taste ten times better than it already is. I have also tried modifying the recipe by adding every fruit or topping that I can think of, and it is so amazing. Try it out now and see for yourself!

Ingredients:

Pancake

  • 1 box southern culture pancake mix
  • 2 eggs
  • 1 cup milk
  • 1 banana, sliced
  • 1 cup crushed Nilla wafers
  • ½ stick soften butter

Filling

  • 1 block cream cheese, softened
  • 1 container cool whip
  • ½ can sweetened condensed milk

Syrup

  • 1 stick salted butter
  • 1 cup sugar
  • ½ cup milk
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Directions:

Step 1

Place a large saucepan or pot on a stove over medium-high heat, then melt the butter, and add the sugar and milk. Whisk them all together until the sugar has completely dissolved, then bring it to a boil for about 2 minutes or until nice and foamy, and remove it from heat. Let the bubbles settle down, then add the baking soda, salt, and vanilla extract, and then give them a good whisk until well combined, set the syrup mixture aside. Prepare the filling in a large mixing bowl, simply beat together the cream cheese, sweetened condensed milk, and cool whip until nice and smooth and there are no lumps, then set it aside.

Step 2

Next, prepare the pancake mix in a large mixing bowl according to the package instructions, then add some wafers and sliced bananas as well, and continue to mix until well combined and incorporated. Preheat a cast-iron skillet pan on a stove over medium heat, then melt the butter and spread a scoop of the pancake mixture nicely on the pan letting it cook until the bottom is crispy and golden brown. Flip the pancake over, then cook the other side until nice and golden, and transfer to a serving plate. Layer the pancakes adding some filling in between and putting more wafers and banana slices as desired before topping them with the syrup, repeat the layers however you want, then add some whipped cream at the top, serve, and enjoy!
