I always love cream pie recipes, but this banana cream pie from Sugar Spun Run on Youtube is right on top of my favorites. I mean, who wouldn’t love this recipe with its creamy filling, a thick layer of bananas, and the homemade whipped cream that completes it? It’s a go-to recipe of mine whenever I have gatherings, and it’s always a hit. Serve this today and see for yourself.

Ingredients:

Crust:

  • 65 vanilla wafer cookies
  • 3 tbsp brown sugar, firmly packed
  • 7 tbsp salted butter, melted

For the filling:

  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 5 large egg yolks
  • 1 1/2 cups of milk
  • 1 1/2 cups heavy cream
  • 3 tbsp butter, cut into pieces
  • 1 1/2 tsp vanilla extract
  • two bananas
  • 1/4 cup lemon juice (or lime juice)

Homemade whipped cream:

  • 3/4 cup heavy cream, very cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, put your vanilla wafer cookies into a food processor and pulse them until fine crumbs. After this, add 3 tbsp brown sugar and continue to grind until well incorporated. Transfer the cookie crumbs into a bowl with 7 tbsp salted melted butter. Stir everything together until the butter is fully absorbed, then transfer it to a pie plate. Push it evenly down to the bottom as well as the sides. Put it in the preheated 350 degrees F oven and bake for 13 minutes. While waiting, go ahead and put together the pie filling.

Step 2

In a medium-sized saucepan, add 3/4 cup of granulated sugar, 1/4 cup of cornstarch, and 1/2 tsp salt. Whisk together to combine. Then, add 5 larger egg yolks, 1 1/2 cups of milk, and 1 1/2 cups of heavy cream. Continue whisking until combined, then turn the stove to medium heat. Whisk continuously while the mixture thickens. Once the mixture starts to bubble, whisk continuously for one minute, then remove it from the heat. Now, add 3 tbsp of butter that is cut into pieces. Whisk until the butter is fully combined, then stir in 1 1/2 tsp vanilla extract.

Step 3

Get a big bowl and a strainer, then pour the mixture through the strainer, and into the bowl. Cover it with plastic wrap, touching the surface, to avoid skin forming. Let the filling cool for 20 to 30 minutes. While waiting, slice your bananas into pieces, dip them quickly into lemon juice, and drain them on paper towels. This will prevent them from turning brown. Now, it’s time to assemble the pie. Pour half of the filling into your prepared crust. Smooth it out evenly, then put the sliced bananas on top. Finally, pour the rest of the filling over the bananas, and smooth it out. Cover with plastic wrap, pressing it directly into the surface of the top of the banana cream pie. Put it in the fridge and let it chill overnight. Before serving, top it off with homemade whipped cream.
