Step 1
Combine the crust ingredients together in a small mixing bowl, then transfer it to a springform pan lined with parchment paper and the bottom and sides greased. Press the crust mixture into the bottom and up the sides of the pan. Bake it in a preheated oven at 325°F for 10 minutes, then set aside and let it cool. In a large mixing bowl, beat the cream cheese, sugar, and flour on a low-speed setting until smooth and well combined. Add in the sour cream and banana extract, then mix on low speed until well combined. Add in the pureed banana and continue mixing on low speed until well combined. Mix in the eggs one at a time until well combined. Pour the cheesecake batter into the crust, cover the sides of the pan with aluminum foil, then place the pan inside a larger pan, fill the outside pan with warm water about halfway up. Bake it at 300°F for 1 hour and 30 minutes until the center is set but still jiggly. Turn off the oven and leave the door closed for 30 minutes. Crack the door of the oven for 30 minutes to allow the cheesecake to continue to cool slowly.

In a small mixing bowl of milk, sprinkle the gelatin and set them aside. Grab a medium mixing bowl, then whisk the egg yolks together, and set them aside as well. Place a large saucepan on a stove over medium heat, then add in the heavy cream, sugar, vanilla, and banana extract, then heat them until warm. Remove the cream mixture from heat and slowly pour the hot cream into the eggs to temper them. Add the egg and cream mixture back into the saucepan, continue cooking over medium heat until the mixture has thickened. Add in the gelatin mixture and give them a good stir until smooth. Pour the mixture into a bowl, then place it on a bowl with ice. In another large mixing bowl, whisk the heavy whipping cream and powdered sugar together on high speed until stiff peaks form. Gently fold the whipped cream into the cooled room temperature custard, grab the cheesecake and remove it from the water bath. Spread the bavarian cream evenly on top of the cheesecake. Then, refrigerate for about 5-6 hours until completely cool and firm. For the topping, whisk the heavy whipping cream, powdered sugar, and vanilla extract in a large mixing bowl over a high-speed setting until stiff peaks form. Remove the cheesecake from the springform pan, then pipe swirls around the edge, then serve with sliced bananas.
