Ingredients:

  • 55 grams or ¼ cup of banana
  • 10 grams or 2 tsp of passion fruit juice
  • 40 grams of ¼ cup of whipping cream
  • 40 grams or ¼ cup of sugar
  • 190 grams or ¾ cup of softened butter

Directions:

Step 1

In a blender or a tall container, add the sliced bananas, passion fruit juice, sugar, and whipping cream, then blend or use an emulsifier to process the ingredients together until thick and smooth. Place a large pot on a stove over medium to medium-high heat, then pour the processed fruit, and allow it to heat up while stirring continuously.

Step 2

Once done cooking, set it aside, and allow it to cool down, then in a separate bowl, add the softened butter and cooked sauce. Beat them together with a handheld electric mixer at medium-high speed, then once light and thickened, transfer it to a piping bag, and use it to pipe and decorate your pastries.
