If you love muffins like me, then you must have been disappointed by a muffin that you baked before when it didn’t come out the way you wanted it to be. But not anymore, when you try this delicious recipe by What’s For Din’? on YouTube which tastes like those that are sold in bakeries! It is super fluffy on the inside that it feels like you’re chewing clouds and have this crusty and chocolatey texture on the outside.

Ingredients:

  • 2½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup granulated sugar
  • ¼ cup butter, melted
  • ¼ cup coconut oil, melted
  • 1 tbsp vanilla extract
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • ½ cup mini chocolate chips, for topping
  • Turbinado sugar, for topping

Directions:

Step 1

In a large mixing bowl, add the flour, salt, baking soda, and baking powder, then whisk them all together until well combined. Now, stir in about 1 cup of chocolate chips until combined, and set it aside. In a separate mixing bowl, whisk together the sugar, butter, coconut oil, vanilla, eggs, and buttermilk until fully combined, then add half of the flour mixture to the milk mixture gradually, and gently mix them together until well combined. Once combined, you can add the remaining half, and gently fold until the batter is just combined making sure not to overmix. Cover the batter with plastic wrap, then put it in the refrigerator, and let it chill for about 30 minutes.

Step 2

Preheat your oven to 425°F at this point, then brush a cupcake pan with butter, and set it aside. Next, fill the greased cupcake pan with the batter up to the brim, then top them with the remaining chocolate chips, and sprinkle them with some turbinado sugar. Bake it in the preheated oven for about 5 minutes, then lower your oven temperature to 375°F, and continue baking for 10 to 15 minutes. Make sure to not open the door in between changes in temperature. Bake it only until a toothpick inserted at the center of the muffin comes out clean, then allow the muffins to cool for about 2 minutes, unmold them, and transfer to the wire cooling rack to finish cooling. Serve and enjoy!
