Combine the softened unsalted butter, sugar, and vegetable oil in a large mixing bowl, then whisk them together until the texture becomes creamy. Add in the fresh lemon zest, as well as the egg but one at a time, mix them together until creamy and well combined but make sure to not overmix. Pour the lemon juice and give them a good mix until the texture is creamy and the ingredients are incorporated. Sift the flour, baking powder, and milk alternately into the mixture and gently mix them together with a spatula until uniform and smooth, make sure to not overmix.

Step 2
Add the blueberries to a medium-sized bowl, then pour about a teaspoon of vegetable oil, and mix them together gently. Add a teaspoon of all-purpose flour and toss the blueberries until each piece is well coated. Then, add it into the mixture/ batter, and fold it in gently until incorporated. Line 12 pieces of muffin liner in a greased muffin pan, then start dividing the batter evenly into the muffin molds. Filling it fully will give you high-dome and bakery-style muffins. Add more blueberries on top, then bake it in a preheated oven at 410°F for about 5 minutes. Then turn down the heat and continue baking them at 375°F for about 15 more minutes or until a toothpick comes out clean and the top is slightly golden.
