Serving for a group of people can be stressful sometimes, you need enough portions to cover everyone, but still, manage to keep all of them full. I was always faced with this challenge, not because I belonged to a large family, but rather a small family with a big appetite. Hearty meals are always a must and chicken recipes never fail. My recent go-to baked chicken recipe is by Sweet Adjeley on YouTube, which is quick and easy to make. You can also make this in advance and let it marinate overnight, then pop it in the oven once you’re ready to cook it.
Chicken Marinade
Potato Seasoning
Step 1
Wash and clean the chicken quarters well, then drain off excess water. Place them in a large mixing bowl, then season with rosemary, salt, chicken seasoning, paprika, spice blend, and olive oil. Rub the seasonings onto the chicken well, make sure that all parts, even under the skin are coated. Cover it with food plastic wrap then let it marinate for 2 hours up to overnight in the refrigerator. However, if you’re planning to bake this right away, then add more seasonings to taste.

Step 2
In a large mixing bowl, add in the potatoes, then sprinkle the chicken seasoning, paprika, rosemary, add sliced onions, sliced bell peppers, olive oil, and salt. Mix and toss until the potatoes are well coated and seasoned. Transfer the potatoes into a casserole or baking dish (divide the potatoes into two batches), then top with 3 chicken per casserole. Bake it in a preheated oven at 375°F for about 30 minutes.
