Have a ton of apples? Make these easy baked apples with cinnamon oat filling! I found this recipe on Downshiftology while looking for apple dessert recipes and instantly knew I had to try it. I just made it last weekend, and it turned out amazing. It surely did not disappoint. The flavors were so satisfying – bursting in your mouth with each bite.

To make baked apples with oat filling, you need apples, old-fashioned oats, pecans, raisins or dried fruits, coconut sugar, ground cinnamon, ground nutmeg, butter, apple cider or juice, and lemon. Start by preheating your oven to 350F.
In a large bowl, add the oats, chopped pecans, dried fruit, coconut sugar, cinnamon, nutmeg, and melted butter. Mix until well combined.
Using a melon baller or pairing knife, remove the top core of the apples. Scoop out some of the flesh to make a well about an inch and a half wide. Do not core through the bottom of the apple.
Using a pairing knife, remove about 1/2″ of the skin around the top. This will keep them from bursting when baking. Place them on a baking tray. Make sure they stand upright. If they are wobbly, slice a bit of the bottom to make them stable. Squeeze lemon over the top edge.
Stuff each apple with the cinnamon oat mixture, then pour the apple cider or apple juice into the bottom of the pan.
Place inside the preheated oven and bake for 45 to 60 minutes, basting the apples several times with the juices from the pan. If the apples are tender when pierced with a fork, they are done baking.
Before serving, spoon the juices from the pan over the apples, then top with a scoop of ice cream, homemade whipped cream, or caramel sauce. Enjoy!
