Ingredients:
- 15 oz (or 3 small cans) tuna in oil (drained and flaked)
- 1 English cucumber
- 1 small/med red onion (sliced)
- 2 avocados (diced)
- 2 tbsp extra virgin olive oil (or sunflower oil)
- juice of 1 medium lemon (about 2 tbsp)
- 1/4 cup (1/2 bunch) cilantro (chopped)
- 1 tsp sea salt (or 3/4 tsp table salt)
- 1/8 tsp black pepper
Directions:
Step 1
Slice one large English cucumber and transfer it into a large mixing bowl. Next, slice two large avocados and add them to the bowl. After this, drain 3 small cans of tuna in oil and break them up with a fork. Now, peel and thinly slice a medium-sized red onion and add right to the bowl. Chop 1/2 bunch of cilantro (about 1/4 cup). Add that into the bowl along with 2 tbsp of fresh lemon juice.

Finally, add 2 tbsp extra virgin olive oil, 1 tsp of salt, and 1/8 tsp of black pepper. Toss it together well to combine all the ingredients.
