Ingredients for Mexican Beef Stew:

  • 2 pounds of beef chuck
  • 2 tbsp of flour
  • 1 tsp of brown sugar
  • 2 tsp of ground cumin
  • 1 tsp of chili powder
  • ½ tsp of cayenne pepper
  • 1 tsp of salt
  • ½ tsp of black pepper
  • 2 tbsp of olive oil
  • 1 large onion, finely diced
  • 4 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 2 tbsp of tomato paste
  • 2 large tomatoes, diced
  • ½ cup of beef broth
  • 1 bay leaf
  • 2 sprigs of fresh oregano or 1 tsp fried
  • Cilantro/coriander, for garnish

How to Make Mexican Beef Stew:

Step 1

Cut the beef into cubes and pat them dry, then mix together the flour, spices, sugar, salt, and pepper and coat the beef with it until nicely covered. Place a skillet on a stove over medium heat, then heat the oil, and saute the diced onion.

Step 2

Sprinkle the remaining seasoning, then keep cooking the onions while stirring frequently until softened, add the minced garlic, and saute for another minute until fragrant.

Step 3

Add the seasoned beef, then cook them for a few minutes until nice and brown, and transfer everything to a crockpot.

Step 4

Add the diced paper, tomato paste, and diced tomatoes, then stir them until well combined, pour in the broth, and throw in the bay leaf and oregano.

Step 5

Cover the crockpot with the lid, then let the beef stew cook on a low setting for about 6 to 8 hours or a high setting for about 4 to 5 hours until the meat is fork tender.

Step 6

Discard the bay leaf, then adjust the seasoning to taste if needed, and garnish it with some chopped cilantro or coriander. Serve and enjoy!
