There are tons of delicious salad recipes you can choose from when you search online, but if you are looking for a new and different recipe you haven’t tried before, look no further than this easy Asian-style noodle salad by The Cooking Foodie. For this recipe, you will be using bean thread noodles which are commonly known as glass noodles or cellophane noodles. This is a light and refreshing salad – perfect for spring or summer.

To make this Asian noodle salad, aside from glass noodles, you will need cucumber, carrot, cabbage, cilantro, and mint. What makes this recipe special is the homemade dressing. It is made from sesame seed oil, honey, soy sauce, lemon juice, garlic, sesame seeds, and red chili flakes. It is sweet, savory, and lemony with a hint of spiciness. Making this salad is super easy and quick. Make sure you try them at home.

Add the noodles to a large bowl, then fill it with boiling water. Soak for about 20 minutes.
While waiting for the noodles, make the salad. In a large bowl, add the cucumber, carrot, cabbage, cilantro, and mint. After 20 minutes, drain the noodles and add to the bowl.
Make the dressing. In a small bowl, combine sesame seed oil, honey/maple, soy sauce, lemon juice, crushed garlic, sesame seeds, and red chili flakes.
Pour the sauce over the salad and mix until well incorporated.
This step is optional. Chop roasted peanuts or cashews and sprinkle them over the salad.
