Ingredients:

  • 2 apples
  • 1 egg, large
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 & 1/4 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1 tsp vanilla extract

For the crumble:

  • 1/4 cup butter, cold
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon

Directions:

Step 1

In a bowl, add 1/2 cup milk, 1/3 cup vegetable oil, 1 egg, and 1 tsp vanilla extract. Whisk well to combine. In a separate bowl, add 1 & 1/4 cups flour, 3/4 cup sugar, 2 tsp baking powder, and 1/4 tsp salt. Stir to combine. Next, peel two apples and cut them into small chunks.

Step 2

Put the chopped apples into the flour mixture and stir well. After this, pour the wet mixture and stir until combined. Line your muffin tin with cupcake liners and scoop the batter into each cup. For the crumble, combine 1/2 cup flour, 1/2 cup brown sugar, 1 tsp cinnamon, and 1/4 cup butter. Mix until crumbly, then sprinkle this on each muffin tin. Bake at 350 degrees F for 20 to 25 minutes.
