Step 1
Grate the apples in a bowl, then add the lemon juice, and give them a good toss to combine. Place a pan on a stove over medium-high heat, then add the butter and brown sugar, once the butter starts to melt, give them a good stir to combine. Add the apples and give them a good stir, then cook them for about 5 minutes until the apples are browned and most of the liquid has evaporated, and then transfer it to a plate. Let it cool, then place it in the refrigerator, and let it chill for about 20 minutes until very cold.
Step 2
Separate the puff pastry along the seams to get 4 rectangles, then top 2 rectangles with the chilled apple mixture, and spread it evenly to the edges. Top them with grated cheddar cheese making sure to save about 2 ounces for later, then cover them with the other puff pastry rectangles making sure the edges are aligned, and flatten them with your hand.
Step 3
Let them freeze for about 10 to 15 minutes and while waiting, preheat your oven to 425°F, then line a baking sheet with parchment paper. Cut the frozen rectangles into 6 pieces, then carefully twist each strip as shown in the video, and place them on the prepared baking sheet. Top them with the reserved grated cheese, then lightly sprinkle some salt, and put them in the preheated oven. Allow them to bake for about 25 to 30 minutes until golden brown and puffy, then serve, and enjoy!
