This veggie pinwheels recipe by Hunger Paynes is one of the easiest and most delicious appetizers or meals that you can make at home. It’s loaded with cream cheese, broccoli, carrots, and cheese! What I love most about this recipe is that it doesn’t require cooking or baking. Plus, it’s healthy and filling. This definitely deserves to be on your weekly meal rotation. Make the filling. In a large mixing bowl, add 16 oz of Neufchatel (cream cheese), 1 tablespoon of parsley, 1.5 teaspoons of dried dill, 1.5 teaspoons of garlic powder, and 1.5 teaspoons of onion powder. Mix all ingredients until well combined.
Season with salt and freshly ground black pepper and mix well. Set it aside and prepare vegetables.
Chop one head of broccoli into small pieces, then add to a food processor. Blend until crumbly, then add to the mixture.
Chop one cup of carrots into small pieces, then add to a food processor. Crush into very small pieces, then transfer to the mixture.
Mix everything with a wooden spoon until well combined.
Place one tortilla on a plate. Scoop 1/2 cup of the filling and put it on the center of the tortilla. Spread the filling evenly, then roll it tightly. Repeat with the remaining mixture and place them on a plate.
Place the rolled tortillas in the fridge for one hour to chill.
After one hour, remove veggie pinwheels from the fridge. Slice into 1-inch rounds and place on a plate. Serve and enjoy while cold!
