I love salads, and I eat them every day. I recently learned about this easy and quick cucumber detox salad recipe by Polly’s kitchen, and it’s absolutely good. The dressing is so flavorful and perfect for the cucumber and carrot. There is also a second recipe below which is equally amazing. It has zucchini, dill, garlic, and walnut. In a large bowl, add the carrots, cucumber, and garlic.
In a medium bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of olive oil, 1 teaspoon of balsamic vinegar, and 1 teaspoon of honey. Mix everything until well combined, then add 2 teaspoons of sesame seeds.
Pour the mixture into the vegetables and mix until well combined. Serve on a plate and enjoy!
Place a pan over heat and add olive oil. Once hot, add the zucchini cubes for about 8 to 10 minutes. Season with salt, mix well, then transfer to a bowl.
Combine chopped walnut, dill, garlic, and two tablespoons of olive oil in a small bowl.
Add the dill and walnut mixture to the zucchini and mix until well combined. Serve and enjoy!
