I’ve never been much of a fan of zucchini but when I tried this recipe by Marcie Flavor the Moments on YouTube, I never wanted zucchini served any other way! Turning them into crispy chips makes eating this vegetable easier and I bet that this will also be your favorite chips to munch on whenever you’re watching your favorite game or TV show, or simply whenever you crave a crispy and savory snack.

It’s so yummy and easy to prepare, plus this recipe comes with a homemade ranch dressing, too! Ingredients for Baked Zucchini Chips:

  • 2 medium zucchini, sliced into 1/8″ rounds
  • 1½ tbsp of olive oil
  • 1/3 cup of panko breadcrumbs
  • 1/3 cup of grated parmesan cheese
  • ¼ tsp of salt
  • Greek yogurt ranch, for dipping, optional

Step 1

Preheat your oven to 425°F, then place an oven-proof wire rack over a large rimmed baking sheet, and spray it generously with nonstick cooking spray.

Step 2

Slice the zucchini into thin rounds, then add them to a medium-sized mixing bowl, and drizzle them with olive oil.

Step 3

Give them a good toss until evenly coated and set them aside, then in a small bowl, add the parmesan cheese, breadcrumbs, and salt, and give them a good stir until combined.

Step 4

Dredge the zucchini rounds in the breadcrumb mixture until well coated, then place them in the prepared wire rack, and space them evenly.

Step 5

Place them in the preheated oven, then let them bake for about 15 to 20 minutes or until golden brown and crispy, and serve with the prepared ranch dressing on the side. Enjoy!
