I have a large family, and making breakfast is always a challenge for me. So it was a big relief when I came across this breakfast casserole recipe from dolcevitadisenorita on Youtube. This dish is super easy to put together, healthy, and it’s a make-ahead breakfast – just perfect for me, who struggles every morning preparing breakfast.  What’s more, you only need a few ingredients for this that you probably already have in your kitchen. Ingredients:

  • 10 eggs
  • 1 bell pepper, chopped
  • 1/2 onion, chopped
  • 1 bag of spinach, washed and chopped
  • 3/4 cup of shredded cheese
  • 2 tbsp of olive oil
  • salt and pepper, to taste

Directions:

Step 1

Heat 2 tbsp olive oil in a medium pan, then add the chopped onions and bell pepper. Saute them until the onions turn soft and translucent. After this, go ahead and add the spinach. Let it cook for a few minutes until it wilts down. Now, season the spinach mixture with salt and ground black pepper to taste. Turn off the heat and set it aside.

Step 2

Next, beat ten eggs in a large mixing bowl, then add the spinach mixture, making sure there’s no excess water or liquid. Mix them until well combined. After this, grease your casserole dish with some cooking spray and pour in the egg mixture. Finally, sprinkle 3/4 cup of shredded cheese over the top. Cover it with aluminum foil and place it in a 350 degrees F oven. Bake for 30 minutes, then remove the foil at the 20-minute mark and let it bake uncovered for the rest of the remaining time.
